Finally a cold winter night!


Started with Blue Point oysters on the half shell...shucked by my Dad and I




Clams with linguine, cherry tomatoes, rosemary/thyme infused garlic, a little bit of white wine all top with parmesan  and basil...



Fire complemented the meal perfectly!

Greens!

Organic homegrown collard greens from Richland Parish, LA
As the green thumb gardener will tell you, this is some of the richest, best soil around...and the collards are proof of it!

We picked these almost immediately before cooking from Cole's garden.



These collards were SO clean they almost did not need to be washed!



Added a ham hock, salt & pepper. Boiled until very tender
These greens beat store bought ones any day!
